Harvest Grape and Chanterelle Chicken
With the thought of the hard and frenetic work demanded by anyone working Crush, we’ve created a highly nutritious, really tasty, yet easy and fast chicken recipe – which includes…. you guessed it… grapes (and oh yeah, Krave Jerky!). While our choice is Krave Pineapple Orange jerky, feel free to use whichever Krave flavor you prefer.
2 Tbsp. olive oil
1 cup shredded Pineapple Orange Krave Jerky (this leaves some for chef’s rightful munching!)
1 large red onion, slivered
1 clove garlic, slivered
2 cups sliced Chanterelle, Oyster or Cremini mushrooms, brushed clean and loosely packed
Salt and pepper
1 Tbsp. olive oil
3 large chicken breasts, pounded to a consistent thickness (this is important for uniform cooking)
1/3 cup white wine
1 cup green grapes
Heat 2 Tbsp. olive oil in a large sauté pan, cook the Jerky, slivered onion and garlic in until the onion just begins to soften. Add the sliced mushrooms and salt and pepper to taste, cook stirring to toss, until soft and slightly wilted. Remove from pan and keep warm.
Heat 1 Tbsp. olive oil in the same pan, and saute’ the chicken breasts over medium-high heat until cooked through, turning as needed. Remove chicken to a warm platter or plates, top with jerky-mushroom mixture and keep warm.
Add wine and grapes to the pan and continue cooking over medium-high heat to deglaze the pan (until liquid has mostly evaporated). Pour grapes over chicken and jerky-mushroom mixture and serve.
