Mushroom & Chipotle Minestrone
Okay, you asked for quick and easy recipes, so here is one! You may not believe just how good something from cans can taste, but you will understand when you try this warm and nourishing flavor-packed soup. It shouldn’t take you long to prepare, then simmer (or else it might be time for a cooking class?).
This is another recipe where the jerky flavor is interchangeable to suit your taste, however Krave’s Chipotle makes this soup sing (and if you use Pineapple Orange Jerky in this I’d think about that cooking class again…).
½ cup diced Krave Chipotle Jerky
½ medium onion, chopped
½ cup chopped celery
½ cup chopped fresh fennel
2 cups chopped mushrooms
2 cups (packed) chopped fresh Kale
1 small clove garlic, minced or mashed
3 Tbsp. olive oil
Sauté the above ingredients in a large sauté pan over medium heat for about 5-7 minutes, tossing occasionally, until veggies are limp.
1 can (28 oz.) diced tomatoes, undrained
1 can (14 oz.) cannellini beans, drained
½ cup (packed) chopped fresh parsley
2 cups chicken broth
½ cup red wine (optional)
1 tsp. Kosher salt
¼ teaspoon pepper
Freshly grated Parmesan cheese for garnish
Add the tomatoes, cannellini beans, parsley, broth, wine, salt and pepper and simmer at a low boil, stirring occasionally, for about 15-20 minutes until all the flavors are combined.
Serve with a couple tablespoons freshly grated Parmesan on top of each serving.
Makes about 6-7 cups soup.
