Spicy Pizza Jerky Muffins
These tasty little mini-muffins are loaded with tantalizing spicy flavors, yet are less than 30 calories per muffin! Pack a few in your back pack or lunch bag for when you need a low-cal pick-up snack!
2 Tbsp. olive oil
2/3 cup finely chopped onion
2/3 cup finely chopped sweet red pepper
¼ tsp. minced fresh garlic
¼ cup very finely chopped Krave Garlic Chili Jerky
1/3 cup whole-wheat flour
1/3 cup all purpose four
2 tsp. baking powder
1 tsp. sugar
¼ tsp. salt
1 Tbsp. chopped fresh basil leaves
1 Tbsp. chopped fresh oregano leaves
½ cup grated mozzarella cheese 2/3 cup?
2 Tbsp. chopped kalamata olives
2 Tbsp. tomato paste
1 large egg, well beaten
1/3 cup low-fat milk
Preheat oven to 400°F and coat a mini-muffin pan with cooking spray.
In a medium sauté pan, cook onion, red pepper, garlic and jerky over medium-high heat until tender, about 5 minutes. Transfer to a medium bowl and set aside to cool.
In a large bowl, gently whisk together whole-wheat flour, all purpose flour, baking powder, sugar and salt. Set aside.
Add basil, oregano, mozzarella, olives, tomato paste, egg and milk to the cooked onion mixture and combine well. Make a well in the dry ingredients and add the vegetable mixture. Stir gently just until combined. Spoon into the muffin cups 2/3 full.
Bake 13-15 minutes, until very lightly browned. Cool in tin for 5 minutes before removing.
